Extracts:
0.5 lb Pilsen Light DME
0.5 lb Light DME

Hops:
.25 oz Saaz at 60 minutes
.25 oz Saaz at 20 minutes

Yeast:
1/2 pack Lallemand dry yeast - Belle Saison

Priming Sugar:
Coopers Carbonation Drops.  1 per 12 oz bottle.

OG: 1.048
FG: ?
ABV: about 5%?

Notes:  Lost a good amount of volume during boil so added some additional water to the 1 gal jug before pitching yeast, bringing OG from 1.065 to 1.048.  On bottling day, with so little available in this small batch I didn't take an FG reading.  No bottling bucket, just siphoned directly into 6 1/2 bottles w carbonation drops added.

4 oz Belgian Special B
4 oz Caramunich

Extracts:
3.3 lbs Pilsen Light LME
1 lb Pilsen Light DME
10 oz Amber Candi Sugar

Hops:
.8 oz Tettnang at 60 minutes
.2 oz Tettnang at 20 minutes

Flavors:
1.25 oz american oak cubes (medium plus toast) soaked in bourbon (jim beam) after 6 days

Yeast:
1 pack Wyeast 3787 Trappist High Gravity

Priming Sugar:
2.2 oz cane sugar

OG: 1.072
FG: 1.011
ABV: 8.01%

Notes:  1.011 SG on 2/5/19 and bottle date

Mosaic Pale Ale

1 lb Carapils

Extracts:
3 lbs Golden Light LME
3 lbs Golden Light DME

Hops:
1 oz Mosaic at 60 minutes
1 oz Mosaic at 20 minutes
2 oz Mosaic Dry Hop after 15 days (from 1/29/2019 - 2/4/2019)

Yeast:
1 pack Wyeast 1968 London ESB

Priming Sugar:
4 oz corn sugar
OG: 1.052
FG: 1.011
ABV: 5.38%

Notes: Used about 3 gal in initial wort boil with later water addition of 1-2 gal to bring to OG, but on bottling day really only ended up with a bit over 3.5 gal.  Still used the 4 oz corn sugar though, so we'll see how the carbonation turns out.
